lamington cakes
Whenever i bake a pound cake i always have extra left the next day. The yummiest way i find to serve a day old pound cake for dessert is by making lamingtons out of the left over.It takes hardly 10 minutes to make lamingtons and 2 minutes to eat them.But i feel its worth it.
What i used:
70 grms chocolate (i used cadbury )
8 tablespoons milk
left over pound cake (6 pieces)
grated coconut -1 cup
How i did it:
1. Cut and melt the chocolate along with the milk in a pan on low heat.
2. stir the contents vigorously until just melted.
this is how smooth i got my mix. If it is still thick, add a few more spoons of milk of heat and continue mixing.
3. let this mix cool for about 1 minute.Meanwhile get on with your cake.
4. Cut the leftover cake in small blocks or however you get it depending on the size of your cake.
5. Dip each piece of cake in the chocolate mix and let it dry in a wire rack for 3-4 minutes.
6. After drying roll each piece on the grated coconut and give it another minute or two to dry.
